I Cannot Live Without Vegan Cake

I love cake, and I don’t think I would have survived to day 13 of my vegan challenge without cake.

A very simple cupcake / sponge recipe was discovered and tweaked by day 3.  This cake recipe is so easy, and you can throw in fruits, nuts (whatever else takes your fancy – vegan choc chips for example) with ease and no worries about messing the whole recipe up. I have been playing around with an egg replacer, No Egg by Orgran makes a great substitutes for eggs in any cake, meringue or even mayonnaise! The egg replacer contains no cholesterol, no lactose, gluten free, wheat free, dairy free, yeast free and each box is the equivalent to 66 eggs. I was a little nervous about trying the egg replacer because I do so much baking and eggs are always in full supply in the larder.

The egg replaces is so simple to make up, to create the equivalent of one egg, just create the mix using one teaspoon of the white powder, mixed with 2 tablespoons of water. A quick stir and the mix is ready to use. The mix blend in well with other ingredients and any recipe tastes just the same as if you were using eggs. I couldn’t spot any difference at all with the quality of my cooking.

Here is the very quick and easy Banana Cupcake recipe:

You will need

  • Orgran Egg Replacer – made up to replace the equivalent to 2 eggs
  • 125g of Vegan Margarine (I use dairy free Pure Sunflower spread)
  • 125g Caster sugar
  • 125g Self Raising flour
  • 2 tsp baking powder
  • 2 Bananas (you can replace the banana with dried fruit, raisins, blueberrys. Whatever takes your fancy)

Cream the margarine and sugar, add your prepared egg replacer, add the flour, baking powder and bananas. Divide into cake cases, or one big cake tin. Chuck into the oven at Gas mark 4, or 180*c, bake until golden and well risen…. and munch!!! It really is that quick and easy.

I like to have custard with my cakes as a sweet pudding after dinner. Obviously custard isn’t vegan (boooo!) but luckily Orgran have got it covered. Orgran’s wheat, dairy and gluten free custard mix. Another really simple alternative product to prepare. Simply made in a similar way to usual custard powder, but use a dairy free milk alternative instead of cows milk. The custard powder mixes well, tastes very sweet and accompanies any pudding perfectly.
